Bramble and Apple Crunch

Don't worry if you don't have the right kinds of sugar. You can substitute granulated and demerara with no problems. Muesli or jumbo oats can be substituted for the rolled oats for a change.

Ingredients: 
  • 1 1/2 lbs of cooking apples, peeled, cored and thinly sliced
  • 8oz Blackberries
  • 2 tbsps castor sugar
  • 4 tbsps orange juice
  • 2oz wholemeal flour
  • 4oz rolled oats
  • 3oz soft, light brown sugar
  • 3oz butter
  • 1 tsp cinnamon
Instructions: 
  1. Heat oven to 190°C, 375°F, Gas Mark 5
  2. Put apples and blackberries in a buttered oven proof dish with the castor sugar, orange juice and cinnamon
  3. Mix flour, oats and brown sugar, then melt butter and stir it in.  Spoon the mixture over the fruit
  4. Bake for 50-60 minutes or until the topping is browned and the apple is cooked.  Serve warm with cream, ice-cream or custard
